Picked in September, in the bottle by October, drunk the moment it's legal. At one minute past midnight on the third Thursday of November the first wine of the harvest lands in London. We're marking the day properly: happy hour first, then a four-course dinner with bottomless Nouveau across two sittings.

The explainer
A whole wine region racing to get its harvest into a glass before winter. Zero cellaring, zero ceremony, one date in the diary. Here's the entire thing in four bits.
Gamay, from the granite hills north of Lyon. Light, red-fruited, built for drinking rather than waiting.
Harvest to bottle in about six weeks. Whole bunches, carbonic ferment, no oak, no filtering, no faff.
Nobody may sell a drop before 00:01 on the third Thursday of November. Same minute in Lyon, London and Tokyo.
Fridge cold, big glasses, something roasted on the table. Nobody has ever improved this wine by discussing it.
Our bottle
We've been going back to the same growers in Beaujolais for years, so this year we asked for our own cuvée: old-vine Gamay, hand-picked, carbonic, nothing added and nothing taken out. It was in a tank in Villié-Morgon in September and it will be in your fridge in November.

The dinner · Top Cuvée, Highbury
Four courses built for the big day, bottomless Nouveau for the whole sitting. Happy hour 2-4-1 on Beaujolais from 16:00–17:30, then two dinner sittings at 18:00 and 20:30. £80pp, includes food, drinks and a limited-edition tote bag.
